Watermelon, Jalapeño, and Feta Arugula Salad

Here’s a great summer salad that has just the right amount of sweetness and kick!  Although every once in a while I get a really spicy jalapeño – which personally I love – but it’s not for everyone.  So, you may need to warn your guests before they dive in.

Ingredients:

• 3 cups watermelon cubed 
• Arugula
• 2-3  jalapeños
• package of sheep feta or I’ve also used goat cheese which works equally well.
• Red onion sliced  – 1/8 cup – (this is an optional ingredient.  I recommend leaving the slices big so people can push it aside if they don’t want it.)

Dressing:

• Garlic Expressions
• Lemon

If you want to go really easy – grab some Garlic Expressions and add till you’ve lightly coated the salad.  There is a lot of flavor going on so there is no need to overdress this salad.  In fact, I usually don’t add the dressing until just before serving.  Then, to enhance all those yummy flavors, I squeeze some lemon over the salad.
