    Caviar, Reimagined: What Plant-Based Luxury Tastes Like

    Curiosity brought me to Zeroe, a plant-based caviar crafted from seaweed harvested off the southern coast of France. I’d read about its rise among fine dining establishments and Michelin-starred chefs, and I wanted to know if it could truly hold its own next to the real deal. After trying it, the answer is: yes—and no.

    Let’s get one thing out of the way: if you’ve had traditional caviar, you’ll notice the difference. Zeroe doesn’t quite replicate that deep, oceanic richness, that subtle burst of brine that only fish roe can deliver. But it comes surprisingly close. The texture is impressively similar—smooth, firm little pearls that pop gently on the tongue—and the flavor is layered with an herbal complexity that makes it interesting in its own right.

    That flavor comes from a thoughtful mix of cayenne, black pepper, turmeric, leek, dill, laurel, and tarragon, all sourced from regions like Norway, Iceland, Scotland, and Spain. Combined with the naturally oceanic quality of the organically grown seaweed, these ingredients give Zeroe a profile that’s savory, slightly spicy, and undeniably fresh. There’s a clean, almost crisp finish that lingers without overpowering, which makes it versatile enough for anything from hors d’oeuvres to sushi.

    And that versatility is part of the appeal. Zeroe is shelf-stable, cruelty-free, and made entirely from plants, which opens the door for people who might never have tried caviar otherwise—whether due to dietary restrictions, ethical concerns, or cost. For vegans, vegetarians, the fish-allergic, or anyone watching their spending, this is a creative, accessible alternative that doesn’t feel like a compromise.

    While I prefer traditional caviar and don’t see Zeroe replacing it in my kitchen, I found it genuinely enjoyable. I imagine it would really shine for someone seeking a luxurious garnish without the baggage. It’s not pretending to be something it’s not; rather, it’s a new interpretation of indulgence, one that’s more aligned with how many people eat today.

    If nothing else, it’s worth trying—especially if you’re curious about where food innovation is headed. We’re seeing a shift in what luxury means, and Zeroe fits neatly into that evolution: thoughtful, sustainable, and surprisingly refined.
