Also, the fact that every one of their guests contacted them the following day to tell them how amazing the food and drinks were, and how they could contact me.”

His dishes carry their own narratives. “People always relate to when they had one of my dishes elsewhere and always say mine is better,” he said with a laugh. “Cacio e pepe is a big one—all related to Aruba’s famous cacio e pepe—but mine is never made with red sauce.”

    Through taste, presentation, and conversation, Chef Mike ensures each meal has a voice—one that lingers long after the last bite.

    Where does this movement lead? For DiLeo, the answer is constant evolution. “Each year I want to improve more and more. I always like to add something to my repertoire as well. From pasta-making parties to pizza parties and now a new spritzer dispenser—it’s the little things that give people that wow effect.”
