    Does Maple Syrup Need to Be Refrigerated?

    Does maple syrup need to be refrigerated? The short answer: Yes. Once you open a bottle of pure maple syrup, you absolutely should refrigerate it.

    Does Maple Syrup Need to Be Refrigerated?

    If you’ve ever left your maple syrup out on the counter and wondered, “Did I just ruin it?” – you’re not alone.

    Why?

    Because maple syrup is hygroscopic, which means it pulls moisture from the air. That moisture invites mold.

    Refrigerating your syrup keeps it fresh, flavorful, and safe. It also slows down microbial growth and helps prevent spoilage.

    You don’t need to panic if it sat out overnight, but long-term? The fridge is your syrup’s best friend.

    The answer depends on one key detail.

    Do you have real maple syrup or are using the “pancake syrup” imposter?

    Real Maple Syrup: Yes, You Should Refrigerate It

    Once opened, pure maple syrup needs to be refrigerated.

    Why?

    Low Sugar, High Moisture: Unlike honey or jam, maple syrup doesn’t have enough sugar to prevent mold growth at room temperature.

    No Preservatives: Real maple syrup is just boiled tree sap with no additives or no stabilizers.

    Mold Can be Sneaky: Even if it looks fine, mold can form inside the bottle or around the cap.

    Tip: If you accidentally left it out overnight, don’t panic. Just check for signs of spoilage (off smell, cloudiness, or mold) and refrigerate it going forward.

    What about Pancake Syrup?

    If your bottle says “maple-flavored syrup” or contains corn syrup, preservatives, or artificial flavors in its ingredient list, it’s shelf-stable. You should know it’s also not real maple syrup.

    High-fructose corn syrup base: These syrups last without refrigeration.

    Preservatives do the work here: They prevent microbial growth, even after opening.

    Still, storing it in a cool, dark place helps preserve flavor and consistency.

    For long-term storage, freezing your maple syrup is your best bet to preserve flavor and freshness. Maple syrup won’t freeze solid, but stays scoopable, so it’s safe to store there indefinitely. You can also set it out at room temperature for a few minutes and it will be pourable again.

    Portion out what you need for a few weeks into a clean jar or dispenser and leave it in the fridge.

    It’s a great tip if you want to buy larger jugs of syrup but know you won’t be able to use it up quickly.

    Does unopened maple syrup need refrigeration?
    Nope! Unopened, it’s shelf-stable. Just refrigerate after opening.

    Can maple syrup go bad?
    Yes! Especially if it’s not refrigerated. Mold growth will be the main culprit.
